Whenever a birthday comes around this is my go to chocolate cupcake recipe! Using only ONE BOWL it’s so easy.
Chocolate Magic Cupcakes
First get a cupcake pan ready, one big mixing bowl, a whisk, measuring items, and pre heat your oven to 350 degrees. I recommend getting as many organic ingredients as possible.
cake ingredients:
- 2 cups sugar
- 1 3/4 cups flour
- 3/4 cups unsweetened coco powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2/3 cup canola oil (or vegetable oil)
- 1 cup milk
- 2 eggs
- 2 tsp vanilla extract
- 1 cup of hot coffee (or hot water) coffee is best!
icing ingedients:
- 1 cup powdered sugar
- 2 TBS milk
- 1/2 tsp vanilla extract
For the cake, in a large bowl whisk together all the dry ingredients. Make a well in the center and add all the wet ingredients. Whisky together well and then use a 1/4 cup measuring cup to scoop the batter into the lined cupcake pan.
Bake in oven for 18-22 min. Let rest for about 1 hr before icing.
For the icing, whisk all the ingredients together and drizzle on the cooled cake. I top with rainbow sprinkles for birthdays or you can use nuts, or any fun toppings you like. I like icing since it’s lower in calories than a butter cream but use your favorite frosting the cake is the best part!
